Fifteen quinces make two large non-stick baking trays worth of cotignac. This is because I spread mine thin, 2mm thick, rather than 2 cm. Housekeeper reports that it took her four hours of stirring. We received, ahem, 70 of them.

Agreement has been reached that for the sake of the survival of her elbows she will be doing this every two or three days, ideally in the evenings, so that I can help. Hopefully I will at least be able to substitute this for the daily five minutes with the resistance bands.

We went with a one-to-one proportion of sugar to quince for this version. Still notably sour, so that's OK.

Quinces also make a nice sour soup with chicken or pork, and I once had a delicious quince tarte tatin, but I'm not that fond of sour soup, and I'm exceedingly fond of cotignac, so we're going to stick to that, with perhaps a quince pie or two...
